Into My Garden's New Orleans Pasta

Serves 12-15 (as a side dish)

12 oz. vermicelli pasta
1 batch New Orleans Pasta Sauce
1/2 bunch chopped green onions
1 cup sliced black olives - drained
1/2 cup diced pimentos - drained
a large handful of matchstick carrots

Note: with all of these vegetables, leave in what you want, take out what you don't, add more, use less, throw in something new...it's your recipe now!

Cook pasta until al dente. Strain and rinse in cold water to stop pasta from cooking and set aside. In a large bowl combine green onions, olives, pimentos, carrots, and pasta sauce. Refresh pasta with more cold water, if it has gotten sticky, and then add it to the bowl with vegetables and sauce. Mix all together. Set it in the refrigerator for 30-45 minutes. Enjoy!
